It is not that Google has written pages specifically for mobiles. Google has a transcoder in place which detects whether the web search requests are coming from mobile device and then it converts the HTML code in to mobile-ready formats which takes much less time to load.  However during the process some texts and images may get altered.

If a website owner does not want Google to transcode the web page then redirect code can be put up in the <HEAD> section of the page. Redirect code is available on Google help.
